Rooted in Irish Tradition

Dublin Bites began in 2018 when head chef Conor Brennan returned home after fifteen years cooking across Europe. His vision was clear: showcase Ireland's exceptional produce through techniques learned abroad, but always with respect for local flavors.

What started as a 25-seat space in Temple Bar has grown into Dublin's destination for contemporary Irish cuisine. Our success stems from partnerships with over forty Irish producers who share our standards for quality and sustainability.

Our Philosophy

Great cooking starts with great ingredients. We believe Irish farms, waters, and artisan producers offer some of Europe's finest raw materials. Our role is to honor that quality through preparation that enhances rather than masks natural flavors.

Sustainability guides every decision in our kitchen. We work directly with suppliers, minimize waste through nose-to-tail and root-to-leaf cooking, and design menus around seasonal availability rather than forcing ingredients out of their natural cycle.
